It’s Pancake Day here in the UK, which is just a roundabout way of saying “British people making crêpes and calling them pancakes” Day. Or, if you live almost anywhere else (especially New Orleans): it is Mardi Gras! So happy celebratory tuesday, wherever you may be!

Right now I am feely grotesquely full of pancakes, but I don’t feel as much regret as I probably ought to. Today has been a fairly relaxed day for me, despite the fact that I did a fair amount. Our washer/dryer is finally working again so I was able to do a bit of laundry, but apart from that I mostly focused on taking it easy and getting back to full health. Gah, that makes it sound like I’m far more ill than I am but I really just mean that I hate being sick and don’t usually give myself enough time to full rest and recover.

We went over to the in-law’s house tonight for pancakes. It’s been almost three weeks since we last went over so we were well overdue! They have a crêpe maker so that’s what we used to make our pancakes with, despite it being the messiest way to do it. It was so tasty, though. The savory pancakes had cheese, mushrooms, roasted peppers and onions, and some had ham or fried egg. For dessert we each had about two pancakes each — I chose lemon and sugar for my first one and then had nutella and banana with a caramel drizzle. What a treat!

Sometimes I get quite anxious about making conversation at these sorts of things but I’ve been doing a really good job at staying true to myself and keeping the discussion flowing without feeling on edge. I wonder how much of that has been down to the fact that I’m just all-around less stressed than I was last year, or whether or not I’ve actually gotten better at holding a conversation. Anyway, I’m knackered. My eyes are struggling to stay open, actually, so I’d better go. There are more things I would like to write about but I’m feeling very rushed to finish this post and get ready for bed. Tomorrow, then!
